I have started a new diet and I am really hungry but I am not so worried about that as I am extremely motivated...I just want to make sure I am eating enough food metabolism wise.
Breakfast 1 egg, 1 slice whole wheat toast light cream cheese coffee, medium orange
Lunch salad with spinach cucumber salsa mozzarella cheese chicken breast 2 tbsp light ranch dressing nonsweetened ice tea
Dinner 1 cup home made veggie soup (carrots cellery onion chicken broth a trace of chicken) 1/2 a turkey sandwich with a trace of mayo. 1 cup 1% milk
desert sugar free popsicle

I am still in the morbidly obese category so I am assuming I am hungry because it is so different from the amout and type of food I used to eat and that I will get used to it. I am also trying to drink water throughout the day 4-6 glasses is where I am at right now (from drinking none before)

I forgot to add, I am low carbing to a certain extent and am not eating anything enriched or any sugar products. I am sure I will eventually not be able to get away with the mayo for example but you have to understand this is a huge huge improvement here...I was eating Mcdonalds 3 times a week and eating a lot of high fat processed foods.

What will speed your metabolism is if you take all that food and istead of seperating it out into 3 meals, divide it out into 6 meals. That way you are eating more often but the same amount which tells your body that it's okay to burn up the fat instead of holding onto it, b/c it's getting fed more often. Also, start lifting weights, light weight right now of coarse. and walk, if you can walk 1 mile a day, you will see a difference. Even if you walk it slowly, it's okay! And congratualations!!! So proud of you for loving yourself enough to do this!! Don't give up, even if you slip up. Don't give up, you can do it!!!

you have to eat 5-6 small meals a day to lose weight - that way your body gets enough calories when it needs them and doesnt have any extra left to store in fat reserves.
you are not eating enough which will make you lose weight but its gona be just water weight and muscle and will slow down your metabolism - you will not be able to maintain low calorie diet for long.
plus you need more fruit and veggies, water, cut the mayo, ranch (light or not) dressing, salsa - all sauces.
find daily calorie intake calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 400-500cal (or you you are very overweight just eat as much as you need for your goal weight) off that number and thats how much you need to lose.
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have protein (lean meat, legumes etc) for dinner - repairs muscle
cardio is the only fat burning exercise and burns fat all over your body (running, jogging, swimming, spinning, elliptical etc) 4-6 times a week for 30-50min (ideally 45min because the first 20-30min body burns carbs and only then starts burning fat), weight training a few days a week but never work on the same muscle group two days in a row (more muscle=faster metabolism)
dont consume foods that are made of white flour (white bread, cakes, pasta etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)

It looks like a pretty well balanced diet to me. Two things you want to be sure of with weight loss, is that you're still getting essential fats, you can always get these through a fish oil supplement. And protein. Make sure you get enough protein.
