There is an entire description listing what the 'clean' and 'unclean' animals are for human consumption, according to Mosaic Laws. These are found in the Book of Leviticus, Chapter 11.

I think because God didn't explain that Noah must have already known what he meant. Perhaps a system of identifying an animal as clean or unclean was developed (or inspired by God) at some earlier point that was never written down. Perhaps God knew that certain animals could be dangerous for humans to eat and those were the "unclean" ones that he told people about early in the bible. Perhaps no one wrote them down until later in the bible because they were considered "obvious" at the time...obvious as in everyone understood without being told (no one needs to tell me I shouldn't eat a rat...yuck!).

God provides a list of animals that are good to eat and those that are not. Clean, ok to eat. Not clean, don't eat.
Also, regarding women being unclean...God does not mean we are always unclean, just during that time of month. Remember, hygene wasn't what it is today and so people had to be more careful...which left on their own, wouldn't have been. (Hence the clean and unclean animals too.)

Animals that don't eat garbage basically. Like pigs eat garbage and anything you give them. Lobsters are bottom feeders and clean up the ocean. Catfish is a bottom feeder. clams filter water.
If you do some research they are very nasty animals to eat. Just like some plants are not good to eat and are poisonous same goes for animals

Unclean animals are those that are not lawful to eat because they mix the natures of different groups of animals.
Shellfish, crustaceans and lampreys are unclean because they live in water but don't have scales.
Rabbits are unclean because they chew the cud but don't have hooves.
Pigs and horses are unclean because they have hooves but don't chew the cud.
I believe there are a few other rules.

In Leviticus 11, God spoke to Moses and to Aaron and told them, all the animals the people should eat and not eat.
The ones they should not eat would be an abomination to them.These are the not clean animals, the ones you can eat are the clean one.

Animals that could be eaten were clean, the others unclean. Sheep, cows, birds, oxen, etc. For a complete list see the Jewish law.

For eating within the Jewish dietary laws. And also - clean animals for the sacrifice.
We know that cows, sheep, deer, chickens and turkeys were on the allowable list, while pigs, rabbits, squirrels, horses, shrimp and lobster were not.
Noah separated them.
