There are two sources for making sugar (sucrose).

Sugar Cane and Sugar Beets.

Supposedly, it's easier to make sugar from sugar beets than sugar cane. Making sugar from sugar cane is a two step cooking process while sugar beets only requires one cooking step.

The companies that produce sugar without using sugar Cane generally use Sugar Beets.

I believe that would be impossible. It's like trying to make olive oil without olives. It just cannot be done, unless you are in a laboratory and try to mimic the chemical structure...But, this is by no means natural and probably not good for you.

However, they do sell sugar that is organic. They grow and harvest the sugar cane without pesticides or chemicals added. It is then processed without preservatives or chemicals.

You can make sugar by reducing maple syrup, then allowing it to cool.

Maple sugar candies are a specialty, but they're very good.

Sugar can also be made from sugar beets. I don't know how it is done or how it can be done at the home level (as opposed to commercial processing) but here is a web article:

you really can't. That's what sugar is. But if you're looking for alternatives there are things such as honey and liquid stevia to act as a sweetner.
