Anytime you overcook vegetables it takes out nearly all the nutrients......I would suggest raw or steamed vegatables.

No, boiling removes the vitamins from all vegetables. Try steaming if possible, or use the cooking water to make sauces.
I use white wine in a frying pan to steam the spinach, then add a little butter, sliced almonds, wholegrain mustard and honey and pour it back over the spinach for a great side dish or base for a warm salad.

I believe that cooking spinach is a little better than eating spinach raw. That's because spinach has a lot of oxalic acid which hinders the absorption of some minerals (especially the calcium) and vitamins. The cooking destroys (for lack of a better word) the oxalic acid.
