There are three ways to make a sauce/gravy for Chicken Pot Pie.

1/ Cream of chicken soup - sort of the easiest way
2/ Make a roux which is equal parts of oil (butter preferred) and flour. Needs more cooking to thicken up.
3/ Use a slurry of corn starch and water. When the liquid comes to boil, that's as thick the sauce will be.

To make Cream Gravy: Mix the canola oil and flour in a saucepan and cook this roux over medium heat until it looks grainy and becomes slightly golden in color, just a couple of minutes.
Remove from heat. Add pepper and salt and mix well. Add milk, return the pan to the heat, and increase heat to high. Whisk until mixture comes to a boil and thickens. Add hot water to thin, if gravy is too thick.
Remove from heat to prevent scorching. The gravy should be as thick as pancake batter. Pour over chicken and serve.

Cream Gravy:

2 tablespoons all-purpose flour
1 cup finely chopped onion
1/2 cup finely sliced green onions
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon spices, recipe follows
2 1/2 cups milk

To make the gravy, carefully pour out most of the hot oil from the skillet, leaving the crumbly bits on the bottom. Add the flour to the skillet and cook it, stirring, with the crumbly bits and oil
for 3 to 4 minutes. Add the onion, 1/4 cup green onions, salt, pepper and Essence and saute until vegetables are tender, about 4 to 5 minutes. Whisk in the milk little by little, until thoroughly combined. Cook until the sauce is smooth and thickened, about 5 to 10 minutes.

spice recipe:

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.

Yield: 2/3 cup

If you are meaning to cook as a pie.(with pastry) Then use a chicken stock cube and hot water, and mix up cornflour in a small amount of water to a paste, and add to the chicken stock, let it cook out for a while on the heat, cool and add to your pie.
Or you could cheat and add a tin of condensed chicken soup.

you could try a sauce called a veloute

4tbsp butter
3/4 cup minced onion
1/4 cup flour
7-8 cups stock..(vegetable..chicken....or beef)
salt and pepper to taste.....if you want to add milk you can..such as 6 cups stock ..one cup milk etc
