It's unclear at this point to what he does with the brains' of "heroes", but there have been many references to him eating the brain...whatever that means and we know it has something to do with him finding out how it works (like a clock)

He doesn't really take a body part (the brain). He takes them apart to see how they work and absorbs their abilities.
