This is like asking, which is better, a Cadillac or a Lincoln!
Both are at the TOP of their game, both have NO disadvantages as far as 1911's go, both will cost you over a thousand dollars, both have excellent service and warranty.

I have a Kimber and I'm entirely happy with it. I use Wilson mags instead of Kimber though. Both are entirely safe choices.
My CDP Pro II is sitting here beside me and I'm currently looking at the Sig 1911s. They seem very well made too.I just like variety.
As boker_magnum says, parts are not an issue. To save weight Kimber used a plastic mainspring housing, I don't really care about the weight so I replaced it with a nice matching stainless part I ordered from MidwayUSA along with a mag well that solved my occasional inability to slide the mag in when I was hurrying. Perfect fit in both cases.

6 of one, half dozen of the other.
Both are right up there among the top quality 1911 manufacturers on the market.
Wilson, Kimber, Springfield Armory, Para Ordnance, etc. etc. There are so many manufacturers these days who produce extremely fine 1911 models. You really can't go wrong with any one you decide to choose.
I don't think parts is a valid concern since most everything is pretty interchangeable and it's not like you live in Siberia and there's only one store to get things from, with the internet you can find the most obscure parts and items with reletive ease.

So, I'm not a Wilson Combat pistol owner - but I have a 1911 in that class and had looked at them prior to purchasing my Infinity pistol. (I was looking more for a competition gun than a combat pistol.)I can say that when GunTests reviewed the Wilson Combat, the Nighthawk and one other model in that class that I don't remember and the Wilson Combat was viewed as the best of the three. Fundamentally, this question always comes up of whether any pistol is worth $2000 - $3000 that isn't a collectors item. The answer is - what is it worth to you to have a 1911 that is built for you and has every last thing, to the last detail, done "right"? A great trigger, match barrel, hand fitted barrel bushing, polished precision fitted rails, you name it, it's all hand fitted. Further, edges all rounded so there is no snag when you are coming out of the draw in that critical situation. LesBaer, for example, has an accuracy guarantee that is probably twice as tight as you'll get with any gun at the tier below it without custom work. The Wilson will shoot in that range as well, perhaps not exactly as tight, but certainly better than a Springfield as an example. (which is an excellent pistol, don't get me wrong. I have one and shoot in Single Stack division in USPSA with it, but it's not in the same class.) I realize you were looking for people who own Wilson Combat guns specifically, and I'm sure you will get answers from them, but much of your question applies to that class of pistol - not just Wilson's offering. Guess I'll go against the grain, but because of personal experience with Kimber I have to recommend the Wilson. A few years ago I would have recommended the Kimber, but today I would have to go with Wilson.

Everyone tells me Kimber. I have a friend though with a Taurus PT 1911 and it beats all the other more expensive 1911s out of the water.

I would prefer a Kimber, because they are more common, and easier to get parts for.
