Portuguese Stewed Chicken
1/2 cup all-purpose flour
Spice recipe follows **
1 whole chicken, about 4 pounds, cut into 8 pieces
3 tablespoons olive oil
1 pound chorizo, cut on the bias in 2-inch pieces
1 medium onion, diced
2 cups diced potatoes
1 red pepper, julienned
1 yellow pepper, julienned
2 cups chopped tomatoes, peeled and seeded
2 tablespoons minced shallots
1 head garlic, skin removed and cloves left whole
1 cup pitted kalamata olives, sliced
1 cup white wine
1 cup chicken stock
1/2 cup finely chopped parsley leaves
Pinch crushed red pepper flakes
1/2 cup sliced green onions
Salt and black pepper
2 cups white rice, cooked, hot
Freshly grated Parmesan, for garnish
Chives, for garnish
Small loaf crusty bread, for serving
Season the flour spices. Toss the chicken in the seasoned flour.
Heat the olive oil in a large cast iron skillet, over medium-high heat. When the oil is hot, add the chicken and sear until golden brown on all sides, about 4 to 6 minutes on each side. Remove the chicken from the skillet and set aside. Add the chorizo to the skillet and cook until browned on both sides.
Add the onions, potatoes, and peppers. Cook the vegetables for 2 minutes, stirring occasionally to prevent sticking. Add the tomatoes, shallots, garlic cloves, and olives. Season the vegetables and spices. Stir in the white wine, chicken broth, and parsley and return the browned chicken to the skillet.
Bring the liquid up to a boil and reduce to a simmer. Cover and simmer the chicken and vegetables for about 45 minutes or until the chicken falls off the bone.
Add the crushed red pepper flakes and green onions. Adjust the seasonings with salt and pepper.
Mound the rice in the center of the bowl. Arrange the stewed chicken around the rice. Garnish with freshly grated cheese, chives and spices. Always serve with crusty bread.
Spice recipe: **
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup

Get deboned and deskinned chicken of your choice. Get a bottle of premade Italian dressing, not the creamy stuff. Put the chicken in a baking dish and add the Italian dressing up to half way up the chicken. cover pan with foil wrap. Preheat oven to 350 degrees. Bake chicken one hour. Tada!
For a side dish, get rice and cook according to directions. Get a packet of the dried italian dressing mix and add about half the package to the rice when it is cooked and let sit about 5 minutes before serving OR you can add about 1/2 the package to mashed potatoes for a different flavor. (If you put the chicken in the italian dressing in a ziplock bag and refrigerate an hour or more, slap the chicken on the grill for a nice change. Heat the dressing until it boils and use as a dipping sauce. My hubby likes to use the dressing from baked chicken as gravy on his mashed potatoes. This is quick and easy!

Roasted chicken is one of my husband's and my favorite. I have a roaster, but we have found that our local supermarket deli makes delicious roasted chickens. So good that we have to stand in line to get one or two. It's best to pick them up in the morning around 10:30. And for you no greasy clean ups.

For more good meals, go to your supermarket and look in the fridge sections (not the frozen section). Look for pre-cooked meats such as pot roast with gravy, chicken, pork chops, pork roast, ham, and many more. Get the top brands that you know and trust such as Smithfield, Tyson, Armour, Hormel, and many more. Just pop into your microwave for a few minutes. Add a couple of side dishes such as canned S&W Sweet Potatoes, or baked potatoes from the microwave, tossed salad, mac & cheese, canned green beans, etc.
If you don't have a microwave, go get one at WalMart for about $60. Get the 1,100w. Read the little booklet that comes with it. You can even buy a Microwave recipe book. A whole new world is about to open up to you.

You can cook chicken a million ways. Get a roasting pan. A large dutch oven made of cast iron is very nice. Put the chicken in there and bake it at 350. You can also put it in a crock pot. Look up some good recipes on the internet and follow them exactly. You'll be cooking in no time flat.

Marinate chicken in Italian dressing overnight. Grill until cooked thru and there are sear marks on the chicken. Top with an Artichoke Cream Sauce:
1 can artichoke hearts, drained (reserve liquid) and cut into quarters
1 4 oz package feta cheese
1/2 cup white wine
3 T cream
1 Tsp thyme
1/2 tsp fresh ground pepper
1 tsp dijon mustard
Mix mustard, wine, reserved artichoke liquid and heat until boiling. Add thyme, pepper and cheese. Add artichoke hearts and simmer until reduced. Salt and Pepper to taste. Serve with rice pilaf and fresh green beans. Spoon sauce over rice and chicken.

Put chicken pieces on a baking sheet. Pour a little olive oil on each piece and rub all over. Sprinkle with a little salt and McCormick's chicken seasoning. Bake in a preheated 375 degree oven for an hour, or until the skin is crisp and the chicken is most! Very good, very easy and my grand kids and my kids love it. If they love it and it's easy, it's a real winner in my book!!

Creamy chicken korma
Ingredients
2 tbsp vegetable oil
1 large onion, chopped
4 whole cloves
4 cardamom pods, crushed
4 skinless, boneless chicken breasts, cut into bite-size pieces
3 garlic cloves, crushed
4 cm/1½in piece of fresh ginger, peeled and grated
1 tsp ground coriander
¼ tsp ground allspice
1½ tsp ground cumin
½ tsp ground turmeric
1 tsp mild chilli pepper
2 tsp tomato purée
75g/3oz ground almonds
250ml/8fl oz chicken stock
200ml/7fl oz whipping cream
salt and freshly ground black pepper
50g/2oz flaked almonds, toasted
Method
1. Heat the oil in a large saucepan or frying pan and fry the onion, cloves and cardamom pods for a few minutes until the onion begins to soften.
2. Add the chicken, garlic and ginger and, after frying for 4 minutes, add all the remaining spices. Stir around in the pan, allowing them to release their flavour into the chicken.
3. Add the tomato purée, ground almonds, stock and cream and bring to a simmer. Cook for about 15 minutes until reduced to the consistency of thick cream. Taste and add seasoning if it needs it.
4. Scatter over the toasted almonds and serve with naan bread.

Why don't you try making a chicken stir fry. Just grab a bunch of veggies you like like broccoli, snow peas, carrots and onions use a little oil, soy sauce and salt and pepper and stir fry veggies then cook strips of chicken and serve with white rice. That's simple and yummy.

*********CHICKEN CACCIATORE WITH NOODLES
1/4 c. oil
1 - 3 lb. chicken, cut up
2 pt. jars Spaghetti sauce
1 tsp. pepper
1 clove minced garlic
12 oz. pkg. noodles
Parmesan cheese
Grated cheese
Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6.
********ITALIAN HONEY MUSTARD BAKED CHICKEN
4 boneless skinless chicken breasts
1/3 c. Italian dressing
1 bulb garlic (or less/more to your taste)
3/4 tbsp mustard powder
3/4 tbsp honey
2 tsp salt
Preheat oven to 400F.
1. Place Chicken in a glass casserole dish that has a cover.
2. Sprinkle salt over chicken.
2. Pour Italian dressing over chicken.
3. Peel cloves from Garlic Bulb and scatter them over the chicken.
4. Sprinkle mustard powder over chicken.
5. Drizzle Honey over chicken.
6. Cover casserole dish and bake for 1 hour or until chicken is cooked through.
Serves 4.
********QUICK AND EASY CHICKEN ALFREDO
2 chicken breast sliced
2 jars Alfredo sauce
2 c. mushrooms
1 lb. fettuccine or any pasta
2 tsp. butter
Sauté chicken and mushrooms in butter until lightly brown. Pour in Alfredo sauce over chicken and let simmer for about 5-7 minutes. Pour mixture over cooked fettuccine or pasta. Sprinkle with Parmesan cheese.

Beer butt chicken.
Season chicken. Insert 3/4 full beer in can in cavity. Grill about 45-60 minutes till juices run clear. (Or roast in oven if grill not available.)
