That's one of the few things I use a premade mix for. I use Mahatma red beans and rice, and make it according to the package directions, usually adding browned Polish or Kielbasa sausage.
Zatarain's is good, too, but we like Mahatma a little bit better.

The easiest way I know of to make red beans and rice is to go to the store and get a box of Zatarain's Red Beans and Rice and follow the directions. They're not as good as made from scratch, but they're not bad...

I'm sorry I could not resist the first best quick & easy way to make it is those box deals, but they so salty like Tony's Chacherie's or Zatarain's.

take some oil in a pan. saute a finely chopped onion in it until brown. add some tomato puree/tomato sauce...let it boil. add salt to taste. add the red beans. mix well. add some water and let it boil.
use the canned beans, then you wont have to soak them overnight.
