I found some excellent veal cutlets on sale today so I'm making Schnitzel.

4 veal cutlets (about 4 ounces each), pounded very thin, scallopini style
Salt and freshly ground black pepper
1 cup all-purpose flour
2 eggs, beaten
2 tablespoons water
2 cups plain, dry bread crumbs
Vegetable oil, for frying

Pat the veal cutlets dry with paper towels. Season them with salt and pepper. Set up a standard breading procedure in 3 shallow bowls or pie plates. Put flour in 1, eggs and water in another, and bread crumbs in the last. Beat the eggs and water together. Dredge each of the veal cutlets first in flour, then egg wash and then the bread crumbs. Do not press the bread-crumbs on to the meat with your fingers or they will become hard when frying.

Fry in a small amount of oil on medium high heat for about 2 minutes on each side. The fillets should become a golden brown.

With the schnitzel, I'm serving mashed potatoes with cheese and garlic, green beans with bacon and onion, sliced fresh tomatoes.

We're having a meaty baked bean casserole tonight. Perfect kickoff to Labor Day weekend. I'd make something with fresh spinach but they recalled it again! Dangit!

Here is an excellent recipe for a Mexican style night:
Mexican pizza:
Premade dough(whole wheat works too)
3 tablespoons of pizza sauce
20 small pieces of chicken-just plain(or grilled)
2 teaspoons of barbeque sauce
1 teaspoon of tabasco sauce
A few spritzes of lemon and lime
1 jalapeno pepper(cut up)
1 Zucchini(cut up)
1 onion and 1 garlic clove(crushed)
1 green pepper(cut up)
1 red pepper (cut up)
3 tablespoons of chile cheese(spicy cheese)
Instructions:
Spread the pizza dough and put the sauce all over it. Then cover with cheese. Mix chicken with barbeque, and spread all over pizza. Spread jalapeno, zucchini,peppers,onion,garlic, and cheese all over. Spriz lemon and lime, and sprinkle tabasco sauce.
Preheat oven to 350 degrees. Put in for about 30 minutes.
Prep time:5 minutes
Cost: Under $10
Serves:6


Spanish Rice:
3 cups white rice
1 can tomatoes and juice
Salt and pepper
1 teaspoon of garlic powder
Boil rice, add tomatoes in pot, salt and pepper, garlic powder, and mix.
Prep time:5 minutes
Cost:under $5
Serves:4

Exotic Salsa:
2 tomatoes, cut up
1 avocado, cut up
1/2 onion, cut up
10 small pieces of pineapple
1/2 cup of cottage cheese
2 garlic cloves, crushed
1 jalapeno pepper, cut up
Mix, add chips, and eat!!!!!
Prep time:5 minutes
Cost:7 minutes
Serves:6
