I always season before so it soaks up the seasoning. I don't think it will dry out the meat as long as you don't over cook it.

Ground pepper only. Each person should salt to taste when the steak is served. I might not like your amount of salt.

You know, I heard the same thing but then I keep hearing all these chefs say to season the steaks with salt and other seasonings before grilling....personally, I like them seasoned beforehand. I don't think it makes them less juicy at all.

i use kosher salt in cooking. i put salt on steak before grilling them. i think kosher salt does not draw moisture from the meat but enhances its flavor. that's why a lot of chefs are using it.

I am with you. I always season my steaks with salt and freshly ground pepper and let them stand at room temperature at least 1/2 hour before cooking them. I do not serve dry steaks.

I salt before and I contacted by favorite meat market and they do the same thing. Salt does not dry out meat.

Most experts will tell you after... but I do it as soon as I turn the steak the first time... a little sea salt and pepper, and you have the perfect steak!

It would take way more salt than would be tasty to dry out the meat.
I don't pepper the meat though. Just some oil and salt (they both help it get tasty and crusty)

I always season an hour before I cook it. It gives the seasoning time to soak into the meat, giving it more flavor. You could always sprinkle a little more on top when it's almost done cooking too!
