FROZEN STRAWBERRY SQUARES
1 c. flour
1/4 c. brown sugar
1/2 c. butter
1/4 c. chopped walnuts
Mix and spread evenly in 9x13 pan. Bake at 350 degrees, 20 minutes, stirring occasionally.
Combine: 1 c. sugar 2 c. fresh strawberries or 1 (10 oz.) pkg. frozen berries and 2/3 c. sugar) 2 tbsp. lemon juice
Whip at high speed 10 minutes or until quite stiff.
Spread 2/3 of the crumbs in pan. Reserve 1/3 for topping.
Whip 1 cup cream. Fold into strawberry mixture. Spread over crumbs in pan. Sprinkle remaining crumbs over top. Freeze. Cut in squares to serve. Garnish with whole berries if desired.

All-American Strawberry Pie
serves 8
INGREDIENTS
3/4 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
3 cups milk
3 egg yolks, lightly beaten
2 tablespoons butter or margarine
1 1/2 teaspoons vanilla extract
1/2 pint heavy cream
1 1/2 tablespoons confectioners' sugar
1 (9 inch) pie shell, baked
1 pint fresh strawberries, halved
1 cup fresh or frozen blueberries
DIRECTIONS
In a 3-qt. saucepan, combine sugar, flour and salt. Add milk, stirring until smooth. Cook and stir over medium heat until thickened. Stir in small amount of milk mixture into yolks, then return all to saucepan. Cook, stirring for 2 minutes. Remove from the heat; stir in butter and vanilla. Cool 20 minutes. Pour into pie shell; chill several hours until firm. Whip cream and sugar; spread half over pie filling. Arrange berries on cream. Dollop or pipe remaining cream around edge of pie.

Make a flag cake! It's easy and perfect!
2 pints of strawberries
1 recipe of your favorite white or yellow cake (mix or from scratch, your choice)
1 1/3 C of blueberries
1 tub of whipped topping
Serves 12
Mix up and bake your favorite cake mix or recipe. Let cool.
Slice 1 cup of strawberries, set aside. Halve remaining strawberries, set aside.
Top cake (in pan) with 1 cup sliced strawberries, 1 cup blueberries and all of the whipped topping. Arrange remaining strawberry halves and blueberries on whipped topping to create a flag design. Refrigerate until ready to serve.

Pistachio pie!
1 Keebler graham crust
1 pkg pistachio pudding mix
1 can (about 15 oz.) crushed pineapple, slightly drained
1 tub of Cool Whip
Mix the pudding mix and pineapple together and let stand for about 10-15 minutes, it'll turn green, that's normal. Fold in the Cool Whip, dump into the crust and put it in the fridge for 4+ hours to set up.
Easy, cool, light, fluffy, and really good!

I love Filo Apple Cups
6 sheets of filo dough
melted butter
Cinnamon &sugar mixture
Stoffers harvest apples ( in the frozen food section)
lay out filyo dough sheet and brush melted butter on top, then sprinkle cinnimion &sugar on top of that.
Repeat this process for every layer as you stack them on top of each other
Then cut dough into six pieces and place in a cupcake pan and bake for 10 min on 350
While the cups are baking, cook apples as directed on the box.
When cups are ready, spoon in apples, and top with vanilla ice cream!
These are so easy, and not pricey to make. You can also put in a different kind of fruit if you like.

There's no better time of year to take advantage of all the fresh fruits available, then now. I would make a fresh fruit bowl, starting with a hollowed out watermellon half, add cantalope and watermelon balls, pineapple chunks, blueberries, strawberries, orange and grapefruit sections, and grapes. Serve in bowls, topped with raspberry shurbet. Refreshing and healthy.

you can make a nice mango ice box cake.
or a nice chocolate rice pudding...
but the best will be enjoying a chocolate fondue with friends and family. and you can lay out the wafetsticks, breadsticks, marshmallows, ice cream balls, fruits, granola bars, churros, and plain donut chunks for everyone to enjoy.
no fondue set? no worries, you can always use a double boiler and transfer in on a nice bowl.
you can even thin out bottled chocolate spread with a little cream & serve from the bottle!

SCOTCHAROOS
1 cup light corn syrup
1 cup white sugar
1 1/2 cups peanut butter
6 cups crisp rice cereal
1/2 cup butterscotch chips
1/2 cup semisweet chocolate chips
DIRECTIONS
Generously butter a 9x13 inch baking pan. Set aside.
In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from heat, and stir in crisp rice cereal.
Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.
In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares.
