CHICKEN SALAD

The chicken should be shredded, and not in chunks.

2 large cans chunk chicken breast
1 small onion chopped
1 1/2 ounces cheddar cheese cubed
1 t. minced garlic
1/3 c. roasted salted almonds chopped
1/8 c. sugar
Miracle Whip, mustard, garlic salt, and pepper to taste

Combine all ingredients in a large bowl. Mix well with a fork. TIPS: Go easy on the garlic salt...remember there is already salt on the almonds...you don’t want to over do it!! Add as much or as little of each ingredient to suit. Also good when made with black olives.

I used turkey for this, but chicken would be just as tasty: cube (or shred) cooked poultry. To this add 1 cup cooked rice, 1 can cream of mushroom soup, 1 cup frozen peas and carrots, 1 cup milk, canned mushrooms(optional). Bake in covered dish at 350. My family enjoyed this and I finally figured out what to do with the rest of the turkey! I also added the rest of the gravy from the turkey.

Try a chicken casserole, I love them!

Make stuffing mix, then use that in the bottom of the casserole. Top with shredded cooked chicken, then top with cream of something (chicken, mushroom, celery) condensed soup mixed with HALF the water or milk it calls for to make soup.

Bake uncovered at 350 for 30 minutes and voila!

Edited to add another idea- if you have lasagna noodles, boil them, then roll up the chicken with spinach & cheese- place them in a baking dish. Dump some spaghetti sauce and cheese over them & bake like above. Chicken pasta roll-ups, yum!

you could make a salad with it like a tuna salad but use the chicken instead.

chicken and dumplings

chicken casserole :
1 can of cream of chicken soup
1 can of cream of mushroom soup
shredded chicken
1 small can of evaporated milk
1 can of lo mein noodles

sometimes put cheese in.

just mix it all together. cover it with saran wrap. put it in the microwave for 5 minutes and you are done. OR you could put it in a casserole dish (uncovered) and put it in the oven at 350 for like 25-30 minutes.

yummy...gonna go get the stuff for that now....laters

Almost anything you could do with sliced/chopped chicken.

Avocado Chicken Buns:
Mash a ripe medium avocado.
Add chicken, medium salsa, mayo, hot pepper jelly,
chopped green onion, lemon juice, salt. Stir well!
Place a cheese slice on each bun half, spoon filling on top.
Garnish with tomato slice; brown under broiler is desired.

Oriental Rice Casserole:
Saute in oil: 1 lb chicken, chopped onion, sliced celery,
diced red pepper, frozen peas, bean sprouts (if desired).
Combine 1 1/2 cups white rice, in a large bowl,
a can each of sliced mushrooms with liquid & mushroom soup.
Add 3 tbsp soy sauce, 1 cup of hot water, 1/2 tsp pepper.
(1 tbsp oyster sauce, 1/2 tsp Chinese 5 spice powder) optional.
Spread mixture in casserole dish, cover & bake in 350F oven.
Stir after 25 minutes, remove after liquid absorbed & rice is tender.
Sprinkle Chow Mein noodles over top before serving.

Chicken salad, chicken tettrazini, chicken casserole, chicken soup, chicken anything that uses chicken! Come on! food.com or something. Don't you have a cookbook at home? The fact that it's "shredded" doesn't mean you can't use it for anything you want. The consistency of chicken in recipes is a guideline more than anything.

Egg noddles, and Cream of mushroom soup.
You could also make chicken salad, or add it to chili instead of beef.
(Just a few thought off the top of my head)
