Beautiful name Carmela is use in Italian and Spanish. The name Carmela comes from the title of the Virgin Mary Our Lady of Carmel. Meaning "GARDEN" in Hebrew.
Personally one L.
If you add one more L, you will take the mystery behind the name.

Carmella is an Italian name, the double "LL" gives a stronger tone to the name....
Carmela sounds sweet, i would go for Carmela too....
