depends:
Late night: sardines, mayo, slice of tomato and slice of red onion on toast.
When in NYC: pastrami on rye bread or a Ruben
When in the mood I drive over to Newark (NJ), up Bloomfield Avenue and find one of the old time places that still makes meatball "sangwhiches" or Italian subs.
In Spain - in Mallorica - it's called "pan boli". You slice a long slice out of the middle of a hard round loaf of bread. Cut a juice tomato in half and rub it into the bread. Drizzle some olive oil (a pungent Spanish one) on the bread and layer some hand sliced jamon Serrano (Serrano ham) on it. This is an opened face sandwich. Wash down with a cold draught.
In Italy it's got to be a mortadella (with the pistachios) on warm crunchy bread. Need no mayo on this one guys. It's gooood as it!

BLT; Tuna, Cheese and Onion melted; Smoked ham with Emmental with a sweet (rather than strong) mustard; Cheese with Salad, Mayo and Branston Pickle; Brie and Cranberry sauce and of course a Club Sandwich, a double decker sandwich using 3 slices of bread with Chicken or Turkey, Bacon, Lettuce, Tomato held together with toothpicks, served with fries, yum! :-)

English cucumber cut length wise with Cheddar cheese sliced thick fresh tomato on french loaf with a bit of mayo.
or a spinach melt
take a French loaf and pull out center smear some mustard stuff with fresh spinach add some thinly sliced onion and top with Cheddar cheese. Place in broiler and melt cheese. spinach will brown on edges but will stay fresh in center. This won an award from a vegetarian magazine. Very tasty and healthy too.

Thumans Liverwurst on Pumpernickel bread with Lorraine swiss cheese. Mayo. Hot mustard and a slice of red Onion. With Kettle chips and a bottle of Boylans Birch Beer. I'm in heaven.
