Typically, New Year's and Christmas are very light travel days. I've travelled on New Year's several times and the plane is usually half empty. If you have the option to save some bucks and don't mind travelling on the holiday, I'd say go for it.

If it's one of the cheapest days, that's probably because not too many people travel on that day. So the airlines try to encourage travel on New Years Day by cutting their prices.
Higher prices occur when everybody wants to travel and the airline knows that people will be willing to pay because they'll have no choice.

The days when it will be busy they jack up the price because they can. They days when it will be slow they cut the prices to encourage people to travel on those days. So if it's a cheap days to fly, it's probably not going to be hectic.

Also check whether the local transport to and from the airport runs.
If you need to take a taxi to the airport rather than a bus or train you will loose more than you safe with the lower fare.
I think in many places they will run a Sunday service, but some smaller and more out of the way airports might be hard to get to or from.
