Yes, that's a marketing trick.
Most people think turkey and chicken as fat free, but that's only true for the breast meat. The leg and thigh meat contain more fat. That's why the breast generally becomes dry (low fat) while the thigh stays moist (more fat).
Also, manufacturers will add additional fat so you don't get a dried out patty. Adding the extra fat add extra moisture and richness.
100 grams of Turkey, young hen, dark meat, meat only, raw
Calories = 130, Total Fat = 4.88 grams (That's 44 Cals from Fat, 34% Fat)
100 grams of Turkey, young hen, light meat, meat only, raw
Calories = 116, Total Fat = 1.66 grams (That's 34 Cals from Fat, 13% Fat)
The breast (light) meat has about 3 times less fat than thigh (dark) meat.

the white meat is very low in fat. However dark meat does contain fat. How many grams is the serving you're looking at for 17 grams of fat? That makes a big difference.

That is a big surprise to me too. I know there is processed turkey you can get that is 99.9% fat free but it is in thin slices rather than in pattie form.
It is really hard to figure out what the heck to eat, isn't it?

Sometimes when they are patties, there is added ingredients. Also, it may have been parts of the turkey that was fatty. Like the dark meat is fatty.

It has to be added or a fatty part of the turkey makes up a good amount of what is in it.
