Crow G,
I think that you are overthinking this way to much. Tahiti is the traditional place for this kind of lodging and it is the number 1 destination for homeymooners. Obviously you are going to have an agent helping you with your travel plans. Tell them what you want specifically and they will provide. The difference between a Villa and a bungalow is the size. The bungalow is usually just a hotel room. The villa is a small apartment with more facilities. (differing on price)
most of this kind of structure are built on pilings or piers over the water. Many have patios with steps to the water and some even have slides so you can just slip into the water in an instant. Try the Moorea Black Pearl or The Moorea Sheraton. I have been to both and I prefer the Sheraton.

or try Bora Bora. There are dozens of great hotels and the scenery is just amazing. Almost all have over the water accomodation and you can choose the level of luxury that you can afford and want. Don't sweat the small stuff. Let your agent handle it and have fun.
