Justme answered this perfectly. I use enough oil so that the bananas are in quite a bit but still have to be flipped to get cooked on the backside. The real trick is knowing when the plantain is ready to cook. I have struggled with this, I think the last one I cooked was quite soft but not real black and it came out so good. Really Carmely on the outside edges. Yumm!

The Cubans eat them several ways but the predominate ways are as Tostones and Platanos Maduras
Tostones:
Get tow or three Platains(Green) and peel. Slice in 2 inch thickness and fry until golden. Take out and drain then smash to make chips (Use a jar) Then put back in frying pan until Golden brown take out salt and drain. Yum Yum
Platanos Maduras:
Let the Plantains ripen until almost black. Peel slice in 2 inch slices and fry until brownish Since they have more sugar int them you have to watch closely or they'll Burn. take out drain and enjoy!

They're very good either sliced in "rings" on the bias, or into strips lengthwise (about half inch thick) and pan sauteed in a little oil until brown and crunchy on the outside.

slice them super thin on a mandolin slicer and deep fry them like chips or batter them , fry them and halfway through, take them out on a towel lined pan and mash them with a glass bottom and then fry them more, season with cinnamon.
baked ones are great too.

If their green, u cut them in circles ,then u fry them on both sides when crispy you flat in them ,with the skin or something flat, then refry. ones their a bit darker and hard their done.

my wife is from nicaragua and she boils them in water and cuts them up in pieces and serves them with fried rice and also for dessert,she slices them thinly and fries them on a lightly oiled pan until golden brown yummy!
