Creamy Chocolate Frosting
INGREDIENTS
2 cups heavy whipping cream
2 cups semisweet chocolate chips, milk chocolate chips or white chips
3 cups confectioners' sugar
DIRECTIONS
In a medium saucepan, bring cream to a simmer, about 180 degrees F remove from the heat. Stir in chips until melted. Place pan in a bowl of ice water; stir constantly until cooled. Gradually whisk in confectioners' sugar until smooth and thick. Store in the refrigerator.

Rich Chocolate Frosting
INGREDIENTS
2 cups butter (no substitutes), softened
9 cups confectioners' sugar
2 1/2 cups baking cocoa
1 teaspoon vanilla extract
1 cup milk
DIRECTIONS
In a large mixing bowl, cream butter. Gradually beat in confectioners' sugar, cocoa and vanilla. Add enough milk until frosting reaches spreading consistency.

INGREDIENTS
2 tablespoons butter or margarine
2 (1 ounce) squares unsweetened chocolate, chopped
1/2 teaspoon vanilla extract
2 cups confectioners' sugar
1/4 cup water
DIRECTIONS
In a medium saucepan, melt the butter and chocolate over low heat. Stir constantly until melted and well blended. Add the vanilla and sugar; beat with an electric mixer. Add water gradually as you beat until it is a spreadable consistency.

I use the recipe off the back of the box of Nestle unsweetened chocolate. Sorry, but I used the last of the squares a couple weeks ago and didn't put it on my shopping list. I still have Hershey's cocoa powder, so I figure I'll just find a recipe on line using that when I need it. Taste of Home or Better Homes & Gardens both have lots of recipes on their websites. Those are in addition to the ones the others will tell you like allrecipes.com and epicurian.com
Have fun with it. To me the trick is to make sure you have the butter, chocolate and at least half of the confectioners sugar really fluffy before adding the rest of the sugar, then the milk and vanilla. Also chocolate frosting does need a small amount of salt...a little less than 1/4 tsp.

The easiest is if you have milk chocolate chips. After you take the cups out of the oven drop a small handful on the hot cups they will melt then spread.

You know, believe it or not, considering the incredible effort to make it "from scratch", I use the store bought kind from Pillsbury or whoever, and add sour cream or regular cream or half and half, or butter.....depending on what frosting I want....and whip it up.................everyone thinks it's homemade, it tastes homemade, and I saved four headaches for my next ethnic "masterpiece"
