You can make potato latkes with applesauce as a side dish/topping.

Potato Latkes

1-1/2 pounds russet potatoes peeled
1/4 cup finely chopped onions
2 large eggs, lightly beaten
2 tablespoons flour
1 1/2 teaspoons salt and freshly ground black pepper
Vegetable oil for frying
Grate the potatoes, place in a colander. Set the colander over a bowl.Let mixture drain for 15 minutes. After 15 minutes, squeeze the excess liquid out of the grated potatoes and discard the liquid from the bowl.
To that potatoes, add the chopped onions, eggs, flour, 1-1/2 teaspoons of salt and freshly ground pepper. Toss to combine

In a large skillet heat 1/4 inch of oil over medium high heat until hot. Drop heaping tablespoonfuls of potato mixture and cook for 3 to 4 minutes a side. Latkes should be golden and crisp on both sides. Eat right away or keep warm in oven. Traditionally served with applesauce or sour cream.

Applesauce Recipe

3 pounds mixed apples, i.e. Cortland; McIntosh; Golden Delicious; Gala; etc., cored and quartered
1/2 cup water
3/4 to 1 cup sugar, to taste
Juice of half a lemon
2 teaspoons cinnamon, optional

In a large saucepan combine the apples, 1/2 cup water and sugar, bring the liquid to a boil, and simmer the mixture, stirring occasionally and breaking up the apples, for 20 minutes. When the apples are tender and the mixture is the consistency of a chunky puree pass the apples through a food mill and return to the saucepan. Simmer the applesauce, gently, for an additional 5 to 10 minutes or until slightly thickened. Adjust seasoning with lemon juice, sugar and cinnamon. Serve the applesauce warm or chilled.

Apples go really well with pork or ham or sausage. I would saute some apple slices (skins and all but the core) in some butter, brown sugar and cinnamon to go along with either a pork roast or pork chops plus mashed potatoes. Don't forget to make some pork gravy from what's left in your pan. Add a nice salad and you've got a very nice meal.

If the sauteed apples don't "appeal" to you, then peel the apples and add a little water to make chunky applesauce. I normally start by adding an inch of water to my saucepan that already has the chunked apples in it. I can always add more if it's too thick, but tough to make it thicker without adding more apples! When the apples are tender, add cinnamon red hots instead of ground cinnamon and the applesauce is a nice pink. Most of the time, the apples are sweet enough that I don't have to add any additional sugar (besides what's in the red hots (another name is cinnamon imperials)

Peel and cube @ 5 apples (1/2 inch cubes) salt lightly to keep from turning brown. Then add @ 2 TSP of mayo, 1/4 cup of raisins, 1/2 cup small marsh mellows, and 1/4 cup pecans or walnuts optional. Mix thoroughly and chill. As far the potatoes I sometimes just peel and slice them into flat slices and boil until low. Add some salt and pepper to taste and this makes a great potato soup.

Well for the potatoes you can make french fries....and if you have some tomato, onion, and peppers you can make a dish out of that just cut up the above and cook it in a pan until the potato is soft and ready to eat...very yum yum. You can of course make baked potato.....potato salad...just mash the potatoes and add some salt, peppers, onion, cream. For the apples...it's really easy you can cook some in the oven just by themselves.....they will come out soft and it is more like a sweet dessert.....you can also cut it up add some yogurt with nuts or cream with sugar nuts and other fruit you have.....you can also make apple pies....you can just eat them as they are....you can make shakes add milk sugar, eggs bananas etc. Those are a few.....good things to have.

Applesauce...peel and core, cut up, put in a large pot with about a cup or so of water and a splash of lemon juice and a stick of butter. Let cook down for a couple hours until gets mushy when you stir it. Add sugar and cinnamon to taste and let cook some more.

Potatoes...cut into cubes, put into a big gallon size ziplock bag with some olive oil and Lipton onion soup mix, shake and mix it well. Then remove and put in a casserole dish and bake in the oven until done (these are awesome, especially with red potatoes). For less oven time, you can nuke the cubed spuds and let cool down a bit before mixing in the bag.

Why don't combine??

Over here in the Netherlands we have a great one pot dish that combines both. In Dutch it's called "Hete Bliksem" (the translation of that is "Hot lightning" :) a delicious potato-apple stew ).

Here: http://www.jannekes.eu/one-pot/apple-potato.html you'll find the recipe.
Just try once with part of you apples and potatoes.

If you have a bit of celery, and some mayo and cream, you can make a potato salad. Boil the potatoes until just aldente. Not completely cooked, otherwise it will be mushy and you dont want that!. Mix with the mayo and cream, add chopped celery and cubed apples, season with salt and pepper and enjoy.

I see a huge meal with just those two things as the main indgrediant.
1st. Baked potatoes with butter and salt and pepper.
2nd. Sliced apples with slices of Cheddar Cheese served cold as an appetizer or dessert.
White Wine with both and your set.
