Utah Valley State College (soon to be Utah Valley University) is in Orem, Utah right by BYU and accepts all students that apply. I plan on going there.
University of Utah (Salt Lake) also has more church members than average and isn't too difficult to get in. I would be accepted and I have a 3.8 GPA.
Utah State (Logan, Utah) has a lot of members and is about even with U of U.
BYU-Idaho is a good school also and my sister loved it there. It is much easier to get accepted there and have a scholership than BYU-Provo.
Southern Virginia University (it's a church school for the east coast) I've heard is also an excellent school but I don't know how difficult it is to get accepted.

The University of Utah and the University of Idaho have quite a large contingent of Mormons. I don't believe their admission requirements are as selective as BYU. In fact, if I were looking for a university to attend, I would prefer either of them to BYU.

Eastern arizona College is a good 2 year college that has a very large LDS community in Thatcher Arizona 2 hours from Tucson. Many go on to BYU later.

All the ones in Utah, BYU, LDS business college, U of U, Utah State, Southern Utah Univ., Dixie College, Weber State (I think I might have missed one or two) Most in Idaho and Arizona will also have larger LDS populations. UNLV has quite a few also.

Utah State University in Logan, Utah.
It's a good school, moderately competitive. I went there, played on the women's soccer team and graduated in 1999 with a degree in Journalism.
Edit: USU also has one of the best Institute programs in the US. And while Cache Valley is largely populated by Latter-day Saints, there are also plenty of other people from various backgrounds that live there too.

BYU Hawaii is relatively strict on admitting students from the U.S. mainland. However, it is fairly easy for Hawaii residents to get accepted. Ditto for those from most other countries.

Univ of Utah (I think that's the one..the one that calls themselves the Utes), and University of Hawai'i both have quite a big mormon campus community.
