i'm not interested in going on vacation with her and my dad for Labor Day weekend because:

1) I'm 23 years old

2) Three's a crowd with my family because my Dad acts like I get in the way of his time with my Mom

3) I'm a new teacher who is exhusted from work.

The only problem is I still live at home, so if I don't go, Mom will be upset because Dad is extremely clingy which annoys her, so I'm like a buffer. She's said several times she wants me to come. It'll be hard to look at her...

Your not responsible for playing mommy's protector. Your mother has been with this man for at least 23 years, its time she stands up for herself. She will have to do it sooner or later when you decide to move out. You are not obligated to go. Just tell her your super exhausted from work and you need the down time... alone... thats why its so great that she and dad are going away... you need the peace and quiet

You tell them just like you wrote it her. You are 23 years old and they can make you go with them. Do they have a reason not to trust you. Why are you still living at home. And even though you are at home, make a live for yourself, enjoy go out with friends.
She should understand, if she is listening to you. Make sure when you tell her that you won't be joining them that she is actually listening to what you are telling her.
Don't let her make you feel guilty. Stand your ground.

Thank them for the invitation then politely decline. Your Mom has to deal with your Dad's clingy nature herself; since he is, after all, her husband. :)

i think if you really don't want to go then tell her. you shouldn't be forced to do what you don't want to. she might be sad, but sometimes you got to do what's best for you. rest up, and you can go on the next one. but you sholdn'tbe forced, or obligated to go.
