Everytime I make apple pie, the bottom crush is soft and chewy and the top is nice and crispy. My recipe says to bake the pie for 15 minutes but when I eat it, I feel like the bottom part is not baked enough. Am I doing something wrong, or is it just soft because of the apple sauce?

Your bottom crust seems soggy because it has moisture that is trapped between the pan and the filling.

Here is a hint for flaky bottom crust: Heat your oven to 400 degrees F. Put the bottom crust only in the pan (before you put in the filling), Prick it in several places on the bottom and sides with a fork. Put the bottom crust in the oven for 5-7 minutes. Remove. Put in your filling. Seal the top crust carefully around the edges by moistening the bottom edge before you seal it, slit the top in several places, or make a lattice top crust. Bake as usual.

It might be the applesauce. Maybe you put this much and it sunck to the bottom. Try not to use as much apple sauce. Here is a great recipie for a fantastic apple pie that you can use. It is plain, but also tastes very good.

Apple Pie


INGREDIENTS

2 Frozen Pie Shells
5-7 Apples
Cinnamon


INSTRUCTIONS

Let the pie shells thaw out for at least 15 minutes. Then slice the green apples and don't include the skins. Then put the apples into the pie shells. Next, Add the cinnamon to flavor. Only add three medium piches all around the apples. Get the next pie shell and put it over the top and crease the sides together. With a knife, slice three small holes at the top of the pie shell. Set ovwn at 350 degrees f. Then put in the oven and bake for 45 minutes or until golden and brown. Take the pie out and let cool for at least 30 minutes. Then when cool serve and enjoy.

because your recipe; is wroung or you put too much apple sauce and remember apple sauce has a lot's of water. some time a pie is soft and chewy at the bottom because you forgot to crease the bottom and the sides you always has to do this no matters what you bake it could be a cake; or a pie, remember this tip in the future!!!; always check the baking direction; most pie takes at least 45 to cook al the way. cook the botton part first for 15 min. cover it with foil paper put 3 smalls holes in the middles. them put all of the filling and what ever else you are going to add to it. cover the top porcion of the pie with foil paper and make some small holes aroud the top. cook for 45 min on 350 deg. when done let it cool for 20min. serve for family or friends; bon appettic. good luck be bless!!!

Is your apple filling already cooked? My apple pie recipe (double crusted or dutch apple) has me bake it at 450 F for the first 15 minutes and then 40-45 minutes at 350 F. Maybe just reread your recipe. But a bottom crust is never going to be as flaky as the top crust because of whatever type of filling you have in it. If the filling seems done and your top crust is done, then I agree with the others to blind bake your bottom crust before you fill it.

You can try brushing egg white on the bottom pie crust. That should help seal it and keep the liquid from soaking in. It might also be that the temperature you are cooking in on is too high. That would crisp the top, but not let the bottom bake through - or are you putting the pie in the middle of the oven? If it's too high, the top will bake, but the bottom might not cook evenly. Try putting in the middle of the oven on a lower temperature and cooking for a little longer.

try to blind bake the bottom crust first, before you add the filling and top. look it up online it is very easy to do. also maybe you are putting the pie too high in the oven? maybe try one of the lower shelves, cover the pie with foil, use a lower heat for longer, 15 minutes seems to short of a period of time for a pie, should be like 45 minimum.

i always brush my crust with an egg wash and then bake it by itself, without the filling until it is golden and a little crispy, then when you bake your whole pie it will give it that little bit of extra crispiness.

try pre-baking the bottom pie crust first, then put the pie together and bake as usual.!☺

hunny the bottom doesn't get crispy bcse all the juices are soaked in during cooking. the juices sit on it and it doesn't get crispy bcse of that. it's supposed to be like that. it's not under cooked. if you feel it's not done enough you can increase the cooking time but not too much. maybe 25 min.
