I only ask because I live in a rather up-scale neigborhood in Southern California. As such with the vast estates and dense vegetation, many possum are visible at night. While driving me home in the late evening, Raul, my driver, has had the occasion to run over them many times. Not the same one, but different ones.

So, since I would expect it to be an excellent source of protien, I am curious about how to have my maid prepare the road harvest. I don't want to spend a lot of money, it is after all just for the help, nor do I want Maria to spend too much time on the cooking.

Do you have any suggestions?

Have a pot luck dinner with the neighbors. Yahoo! The night before the dinner you'll want to catch yourself a fresh possum. This in itself is excellent entertainment on a moonlight night. I suggest procuring a bottle of Moonshine or keg of Bud to stay hydrated during the adventure. Of course, since you live in an upscale California neighborhood, let me also suggest that a vintage bottle of St. Francis or Beringer Howell's Merlot would also be quite tasty during the hunt. Once you catch the critter, remove the head and feet and freeze the chubby little guy overnight so as not to stink up your gourmet kitchen.

Possum Pot Pie

Ingredients:
1 cup glazed huckleberries
3 shots gin or moonshine
1 possum
---if roadkill: make jambalaya
---if caught: proceed with recipe
1 pie crust
sliced carrots & cabbage to taste

Directions:
Cover a pan (or any implement you can put in a fire) with the bottom of your pie crust, and place the possum in it. Add the huckleberries and carrots, and shred the cabbage over it. Close up the pie and bake until the neighbors' dogs come sniffing around to see what the wonderful smell is. You'll know it's done when the dogs begin howling or the fire department arrives (whichever comes first). Remove pie from fire/oven, slice, and enjoy.

you go find an old barn and remove a plank from the side. tack the possum on it. Build a fire in your BBQ grill using some more of the planks from that old barn. Put the possum on the coals and leave it there for about 30 to 45 minutes.

Remove the possum from the plank and throw it away. Slice up the plank and serve it with strawberries and cream.

this is too good a recipe to share with the maids and other household help!!

If you can afford a maid and driver you should be able to afford regular foods for them to eat and not have to feed them roadkill. I would think that such an up-scale dwelling guy as yourself would know that the proper spelling is opossum. By the way tell Raul I said, Hi!!

Freeze it. Take it to work with you and let it thaw during the day. As the end of the work day approaches, place it on your exhaust manifold so it will cook on the drive home. I usually gut them and put an onion inside and maybe some cream of mushroom soup. The soup is optional but trust me on the onion!

Talk to Mr Drysdale. Tell him you would like to meet EllyMae and while your at the Clampitts, see if Granny will teach you how to make possum. She will usually just ask you to eat hers.
