you are talking about my favorite fish!!! brush on some butter. broil them, sprinkle on lemon pepper , when they get done pour over a little melted butter. just before you serve them pour on a little lemon juice. i live in florida and there is a great seafood restuarant here that fixes it like that. they are always packed. make baked potatoes with sour cream and bacon bits add a tossed salad...food fit for a king. yum.

Here ya go !
Flounder Saute
Easy and tasty fish dish.
1 servings 25 min 10 min prep
2 teaspoons extra-virgin olive oil
1/3 cup finely chopped onions or shallots
1 small italian pepper or other mild pepper, chopped (about 2/3 cup)
2 plum tomatoes, chopped
1-2 teaspoon capers, rinsed
2-3 imported black olives, pitted and slivered
1 sprig Italian parsley, chopped
1-2 flounder fillets or other thin mild-flavored fish fillet (about 5 oz)
salt & freshly ground black pepper
Heat oil in non-stick skillet.
Cook onion until translucent.
Add pepper and tomatoes.
Cover and simmer about 10 minutes.
Add capers, olives, parsley.
Put flounder fillet on top and spoon some juices over it.
Season to taste with salt and pepper.
Cover and simmer about 5 minutes, until done.

Flounder is really great baked. You may grill, that would be good too. Why not bake on one side, turn over, brush on some lemon and butter and finish baking. If you have time to make some crab stuffing---that's terrific in flounder.

Put them on top of some rice and sprinkle them with rosemary and thyme. If you can, bake the flounder for an authentic taste.

Just broil it and serve it up with a nice mango salsa - it's really yummy and a great dish in the summertime!
1 ripe mango, peeled, seeded, and diced
1/4 cup finely chopped poblano pepper
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped red onions
1 1/2 teaspoons minced garlic
1/2 cup rice wine vinegar
2 tablespoons finely chopped fresh cilantro leaves
1/8 teaspoon salt

I like them lightly salted and gently fried with a squeeze of lemon juice, or a light drizzle of malt vinegar when I plate-up.

You can pan fry it like normal, or you can get some crabmeat and stuff it on the inside and serve it with green beans and rice pilaf or cous cous

slice it..filled it with anything you like..covered with panko and fry..serve it with fav. sauce and sauted vegetable and fried potato wedges..
