CHEESE AND HAM STRATA
7 slices thin white bread
2 c. shredded cheddar cheese
1/4 lb. shaved chopped ham loaf luncheon meat
4 eggs
1 1/2 c. shaved chopped ham loaf luncheon meat
4 eggs
1 1/2 c. milk
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. prepared mustard
1/4 c. Parmesan cheese
Tear bread into bits and arrange in buttered baking pan. Tear shaved ham into bits and arrange on top of bread. Scatter shredded cheese over bread and ham mixture. Mix together in bowl, eggs, milk, salt, pepper and mustard. Pour liquid mixture over ingredients in pan. Top with Parmesan cheese. Bake for 30 minutes in uncovered pan at 350 degrees. Loosen strata from pan sides after removing from oven.

Here is the recipe that everyone in my family always raves over. It is so good!!! Yum!
Breakfast Casserole
6 large eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
2 slices white bread, Cubed
1 lb sausage, Browned
1 cup sharp cheddar cheese, Shredded
Beat eggs, add milk, salt and mustard, mixing well.
Grease bottom of 9" x 13" baking dish.
Place in layers of bread cubes, the sausage, then cheese.
Pour egg mixture over the top.
Refrigerate overnight.
Bake at 350F for 45 minutes.
Let stand about 5 minutes before cutting.
NOTE: For 8 people use 3 slices of bread and 8 eggs.
Also, sometimes we change it up a little by adding vegetables. I like to use things such as green onions, white onions, or even mushrooms. It helps give it some color and a little more taste.

Breakfast casserole is an easy make - ahead recipe that you can pull out of the fridge on Sunday morning, pop the casserole in the oven and enjoy.
Blend eggs and milk. Break up slices of bread (crusts removed). Add to egg mixture. Add salt and dry mustard. Add cooked sausage (bacon or ham) and cheese. Bake at 350 degrees for for 40-45 minutes. Can be asssembled at night and baked in the morning.

Breakfast Casserole
10 eggs (egg beaters do fine)
2 1/2 cups of milk
1/4 cup of chopped onion
1/2 cup Velveeta cheese
1/2 cup shredded sharp cheese
3 slices bread buttered and cubed
1 cup sausage (milk)
1/4 cup green pepper chopped
Brown sausage with onion and pepper. Drain sausage mixture on paper towel. Blend eggs and milk. Butter 9"x13" baking pan. Put bread cubes in bottom of the baking pan. Spread cheese over bread. Then sprinkle sausage mixture over all. Refrigerate over night covered. Preheat oven 350. Bake for 45 min-1 hour or until set. This will serve around 8 adults. Other ingredients can be used or meat can be omitted or other meats substituted.

I have made this recipe many times and it's always a hit.
BREAKFAST CASSEROLE
2 pkgs hash brown potatoes (plain or the kind with bell peppers in it)
1 medium onion - diced and sauteed until soft
1/2 to 3/4 pint sour cream *
1 1/2 - 2 c shredded cheddar cheese
1 lb bacon - cooked and crumbled
Mix all together and place in a casserole dish. Cover and refrigerate until ready to use. Bake in 350º oven for 40 minutes or until bubbly. Enjoy! You can also use green onions in place of the sauteed white or yellow onions if you'd like. A different flavor with each.
* You want enough sour cream to make it moist but not soupy

Italian Breakfast Casserole Recipe
Ingredients:
1 small onion -- minced
2 cloves garlic -- minced
14 1/2 ounces tomatoes, diced w/olive oil & garlic
4 large eggs
2 cups potatoes -- cooked and diced
1 cup ham, extra lean, boneless -- diced
1 teaspoon Italian seasoning
1/4 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
1 tablespoon olive oil
1 cup shredded Italian Six Cheese
Directions:
Heat oven to 350 F. Heat olive oil in large frying pan. Add potatoes, ham, onions and garlic. Cook until potatoes brown and onion and garlic soften. Mix together the remaining ingredients. Add to potatoes mixture and mix well. Pour into a 1 quart casserole dish. Bake uncovered in a 350 F oven for 30 minutes or until knife inserted in middle comes out clean.

I have a tried and true breakfast casserole for you and I call it Breakfast Casserole. Here it is:
2-3 slices Bread, cubed
1 lb. Sausage
8 oz. extra sharp Cheddar cheese (shredded)
6 eggs
2 c. Milk
1/2 tsp dry mustard
1/2 tsp. salt
1/4 tsp. pepper
Cook sausage (like hamburger for chili), drain, set aside. Grease a 9 X 12 inch casserole dish. Cover bottom of dish with bread. Sprinkle fried sausage over top of bread. Sprinkle with cheese. Beat eggs, milk, dry mustard, salt and pepper. Pour over top of layers and cover with foil. Refrigerate overnight. Bake uncovered, in pre-heated oven at 350 degrees for 45 minutes. Eat and enjoy.

Breakfast Casserole
INGREDIENTS
1 (10.75 ounce) can condensed cream of chicken soup
1 (16 ounce) container sour cream
1 (2 pound) package frozen hash brown potatoes, thawed
1 cup cubed, cooked chicken meat
1 cup diced ham
1 onion, chopped
3/4 cup shredded Cheddar cheese
1 cup crushed potato chips
1/4 cup butter, melted
DIRECTIONS
Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

since we do Christmas morning breakfast at my mother's house, this recipe always gets raves
8 slices bread, cubed (day old bread works best)
1 lb regular or hot sausage cooked, drained, and crumbled
1 cup cheddar cheese, grated
8 eggs, lightly beaten
2 2/3 cups milk
1/2 chopped medium onion
1/2 c. chopped bell pepper
Spray a 9x13 pan with PAM cooking spray
Layer bread cubes, sausage, and cheese in pan.
Combine eggs, milk, and onions and bell pepper and pour over bread, sausage and cheese mixture.
Cover and refrigerate overnight.
Bake in a preheated 350 oven for 55 minutes.
