ok...so ive learned that nephesh or neh'-fesh is the original hebrew for the word soul AND life. so why do most bible translaters choose the word life?

It's mainly a matter of context. The same can be found in the New Testament with the word psuche, which is also sometimes translated "life" and sometimes "soul." The reason is the word in the Greek and Hebrew for soul has a broader range of meaning than just "life". Also the English word life is translated by at least 3 Greek words. Psuche - which is life contemplated subjectively; Zoe, which is life intensively; and Bios, which is life extensively.
As you can see, it's not a simple subject.
