1. Smoked Salmon Canapes:
Use your favorite crackers, spread cream cheese (herbed if you like) then lay pieces of smoked salmon over cream cheese, add a few capers, squeeze fresh lemon, add a few sprigs of fresh dill and enjoy!
Beautiful presentation too!
2. Stuffed jalapeno peppers:
Cut peppers in half lengthwise, remove seeds (unless you like it HOT)
Mix minced garlic & small diced red bell pepper, salt & pepper into your cream cheese.
Spread cream cheese mixture into pepper halfs, garnish with remaining diced red bell peppers and Enjoy!
3. Bruchetta:
1 whole loaf of baguette bread, cut into rounds 1/4 -1/2 inch thick. Spread with olive oil and bake on a cookie sheet for a few minutes until toasty. While baking baguettes, prepare in a bowl, fresh chopped tomatoes, fresh basil, fresh garlic and a little olive oil, salt & pepper.
Place a good amount of tomato mixture on each piece of toast and return to the oven and bake until you smell the yummy garlic. Garnish with pieces of basil if you like.
ENJOY!!!

Feeding 120 people is not easy, no matter how easy the recipe is. Buy dips and cheese with crakers and vegtables. Some store bought cookeis, and you're good to go.
