For one thing, your premise is incorrect:
ALL of a pig can be considered "pork".

It is delicious is what it is.
During hog butchering, the kids would fight over who got the tail. It was cleaned well and roasted until crisp. Tastes like crisp bacon.

unless you dry it, salt it or smoke it
