RE:
Why do hard boiled eggs yolks sometimes turn green? Are they safe to eat?

They are overcooked. Eggs have sulfur in the yolk and it reacts somehow to make the green color. Perfectly safe to eat though and taste fine too. Follow these instructions and it won't happen. Put eggs and cold water in a pan, bring to full boil, cover and remove from heat, let set 15 mins. Voila, perfectly cooked and no green.

When hard boiled egg yolks turn green, I think it just means they are a little overcooked. But still okay to eat.

They're fine to eat. They turn green when a little over-cooked and some times when the egg cracks during boiling.

They're Overcooked (& they're fine to eat, albeit alittle dried out). Try THIS- for perfect hardboiled eggs; Put your eggs in a pot of water, COVER- and put on the stove to boil. As SOON as they start boiling, turn OFF the Stove- but LEAVE the pot on the still warm burner for another 20 to 25 minutes. Then- take the pot off the Stove, cool the eggs in cool water in the sink- & peel. Your hardboiled will be YELLOW- & delicious! No kidding! :)

That's just oxidization due to air exposure. They're still safe to eat, as long as they've been refrigerated or are have been freshly boiled and peeled.

They've never hurt me before. Don't really know what causes that though.
