I think one was black, one was a redhead, and one was blond???

I think I remember this... the group was called "Betty" and they were on a show called "Encyclopedia"

It does sound like you're describing Josie and the Pussycats--except that the show was a CBS-TV Saturday morning cartoon, and it wasn't educational.
