it's kind of simple, but why not make her a heart with a happy face on it. it's symbolic :)

Do you have a heart shaped cake pan? That would be cool if the top were completely covered in masses of flowers, with a basketweave type side decoration.

Wilton cake books have some great designs. One of my favorites is a mauve colored cake with the top completely covered in massed roses of the same color, with just a very few little leaves and tendrils in a soft sagey green. It is pretty in a round too.

Another idea is to make a square cake, smooth the frosting so it looks like fondant, and make it look like a present. You could pipe little hearts on in a contrasting color, with a bow made out of royal icing or fondant to match. (That would sort of say that she is a gift of love to you.) Pink with white hearts and bow would be pretty.

Topping off whatever your final design is with a little of the sparkly flaked clear sugar always makes a nice touch.

Hope you and your Mom are both doing very well. She will love the cake. You are sweet for making it for her!

2 hearts with roses laying across the middle or try a big cookie cut in shape of a heart
