Make a nice meatloaf.
This meat loaf is delicious with mashed potatoes and green beans or a tossed salad. It's an easy meat loaf to mix up, perfect for any day of the week.
INGREDIENTS:
1 1/2 pounds lean ground beef
1 cup soft fine bread crumbs
1 large egg
1/2 cup ketchup (plus more for topping, if desired)
2 teaspoons spicy brown mustard or Creole mustard
1 medium sweet onion, finely chopped
1/2 red bell pepper, finely chopped
1 teaspoon Cajun or Creole seasoning, or similar seasoning blend
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried leaf oregano
PREPARATION:
Heat oven to 350°.
Combine all ingredients in a large bowl; work together with hands until thoroughly blended. Pack into a meatloaf pan or a 9x5x3-inch loaf pan and bake for 1 hour.
If desired, spread about 1/2 cup of ketchup over the top of the loaf about 15 minutes before the meat loaf is done.
Serves 6.

Chili is a really quick and easy thing to make with ground beef. You only need a few more ingredients (that you might already have). There is no wrong way to make it, just adjust this recipe for what you have. One pound of beef will feed 4 people easily, but if you've got more, chili freezes really well and you can reheat it in a microwave later.
Brown the ground beef in a large stock pot/ sauce pan like you would for taco meat.
After the meat is completely cooked add in 1or 2 cans of a tomato product (or mix and match). Tomato sauce, chopped tomatoes, tomato juice, etc. Pretty much anything will work. I like using one small can of tomato paste and one regular can of diced tomatos.
Add in 1 or 2 cans of beans. Chili beans, kidney beans, black beans, etc. Again, just about anything will work. I like to mix one can of dark red kidney beans and one can of black beans.
Season the stew with chili powder, taco seasoning, or whatever other Mexican inspired flavors you've got on hand. Add as much or as little as you want. There isn't really a way to mess it up.
You can also add onions, peppers, and just about anything else you've got on hand.

Get out your biggest and heaviest fry pan with a lid.
As always, saute some onions and garlic. Meanwhile, check the cupboards and fridge for any of the following:
dry small pasta: Orzo, elbows, bow-ties, etc.
Vegetables like broccoli, celery, bok-choy, regular cabbage, carrots, turnips,...
A can of beef broth, cheddar cheese soup, etc.
Assemble your finds.
Brown the meat, drain extra fat.
Add pasta, vegetables, liquid (I suggest using water to cook if you are using cheddar cheese soup, use the soup as sauce at the end).
After all the parts are added, bring to a boil, cover, reduce to a simmer, and set the timer for 20 min.
Check if the pasta is done, adjust seasonings.
Also good with high quality cube tofu.

Easy stroganoff recipe--Brown 1 pound ground beef in skillet,drain. Put back on stove, add 1 can cream of mushroom soup and 1 can cream of chicken soup, and 1 cup sour cream. Heat till hot, salt and pepper to taste--serve over noodles or rice. Yummm

Ground beef- casseroles, meat loaf, meat balls, spaghetti sauce, chili, hamburgers, hamburger gravy on mashed potatoes, Hamburger vege. soup, hamburger noodle soup, tiny cocktail meatballs in a sweet sauce, hamburger and scrambled eggs...an on and on, Enough?

You can make Mac and cheese with ground beef in it. You can make dirty rice (sort of) with it. Loose Meat sandwiches, I make mine with barbecue sauce and onions and spices, Sloppy joes with pasta sauce......of course burgers, and meat loaf, meatballs. Stuffed peppers, cabbage rolls.

I love to invent ..
Without going to the hassle of making cabbage rolls....do as follows.
boil some cabbage.
In fry pan..
olive oil
chopped onion
garlic
ground meat till brown
add cooked cabbage
add cooked rice to the pan.
blend all together and be sure it is all hot.
salt and pepper..
yummmm
Same as cabbage rolls but no work and no loss flavor from cooking all day

brown 1 pound-ish meat ,drain,add 3 cans cream of chicken soup and about 2 tablespoons of sour cream(salt pepper etc.)cook on med low about 30 mins.Add to cooked rigatoni.really cheap easy and delicious dinner,even better the next day
