I strongly advise talking with an accountant before you sink one penny into the restaurant. They can tell you all about the business end of it, and give you cash management advice, including what receipts to keep, what's deductible, etc.

I'm not sure what you want.

Just make sure your credit and cash is greater than your debts and payroll.

In fact, you should be keeping a ledger of your expense before you open... set up fees, licensing fees, remodel cost... etc.
