I make a "pie" without the pan by spreading the dough for the crust on a cookie sheet. Pile the filling in the middle and "fold" the pastry up around the edges. Reduce the baking time as it is usually not as deep as a pie. Just monitor it in the oven and pull it out when the crust is golden. yumyum! You might also put another cookie beneath it to catch any drips. If you use a jelly roll pan this won't be necessary because of the lip around the edge. Oh! Bake your creation on a sheet of parchment paper. it makes clean-up soooooooo much easier!

Why don't you make a free form one. Roll the dough out and lay it on a cookie sheet or jelly roll pan (anything big and flat). Then pile the apple filling in the center and fold in the pastry from the outside to the middle. The center of your pie may not be covered but that's OK. Seal it with water to keep the juices in while it cooks.

You can use a glass dish if its Corning Ware or heat resistant. Or you can use a muffin pan and make individual pies. If you make little pies you will need to reduce the amount of time somewhat so they dont burn.

Sure. Put your apple pie filling in square stoneware pan or glass---roll your pastry dough in square shape and put dough on top of filling. Bake square dessert in place of round.

You could use a dutch over. Put the unbaked pie in the dutch oven, bury it in hot coals. Or you could use a barbecue, which does work just fine.
