Why can muslims only date muslims?

It is not the case. Some Muslims do date non-Muslims especially in those countries with less social and cultural limitations.
Anyways, It is ok to Muslims (Submitters) to get married with the people of the book (Jews and Christians) and the monotheists as well. There is a common rule says that Muslim girl could not marry non -Muslim guy which I am not sure about since I've never read or seen this in the holy Quran.

I think it women are discouraged from going outside of Islam but muslim girls at my school flirt with me all of the time.. They're subtle because they're always someone watching but they would definately date and marry outside the faith if the feel free to do so..

Muslims arent "supposed" to date, at all!
Muslim men can marry however believing(monotheistic) non muslim women. Muslim women are supposed to marry muslim men only, for the mere reason is that traditionally women followed their husbands traditions and religion therefore if she married a non muslim, she would abadon her own faith."And give not (your daughters) in marriage to Al-Mushrikoon till they believe (in Allaah alone)" [al-Baqarah 2:221]
FYI mushrikoon people who believes or subscribes partners to Allah...i.e. son of God, e.t.c
