Simple pancake recipe from scratch?

Oat Pancakes

1 cup quick cooking oats
1 cup all-purpose flour
2 Tablespoons sugar
2 tsp baking powder
1 tsp salt
2 eggs, lightly beaten
1 1/2 cups milk
1/4 cup veg. oil
1 tsp. lemon juice

In a large bowl, combine the first 5 ingredients.
Combine the eggs, milk, oil and lemon juice; add to dry ingredients and stir just until moistened.
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown.
Yeild: 6 servings

I make these pancakes every weekend and we love them! It's a nice way to sneak in some extra fiber, too. Enjoy!

Truck-Stop Buttermilk Pancakes

"A yummy breakfast treat, and very easy to make!! Serve with bacon or sausage, and some fried eggs, wonderful!!! Batter will keep in fridge for a couple of days if you can't make all at once, or you can freeze and make at a later date."

Original recipe yield:

INGREDIENTS
5 eggs
1 1/2 cups milk
6 tablespoons butter, melted
5 cups buttermilk
5 cups all-purpose flour
5 teaspoons baking powder
5 teaspoons baking soda
1 pinch salt (optional)
5 tablespoons sugar

DIRECTIONS
In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

(Classic Weekend Pancakes)


Ingredients
* 2 eggs
* 1 1/4 cups milk
* 1 teaspoon vanilla
* 3 tablespoons butter or vegetable oil
* 1 1/2 cups all purpose flour
* 3/4 teaspoon salt
* 2 teaspoons baking powder
* 1 tablespoon sugar (optional)



Directions
Easy recipe to make pancakes from scratch.

Blend the eggs, milk and vanilla in a blender or food processor for about 3 minutes.

Mix dry ingredients together (flour, salt, baking powder,sugar) in a large bowl.

Gently fold in egg mixture and quickly (and gently) stir until completely mixed.

Let the batter rest while the griddle is heating (batter will thicken upon standing). Grease the preheated griddle and pour 1/4 cupfuls of batter on the lightly greased griddle.

Cook on one side until bubbles begin to form and break. Then turn the pancakes and cook on the other side until brown (turn only once).

2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.

Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

IHOP CLONE PANCAKES

1 1/4 cups flour
1 1/2 cups buttermilk
1/3 cup cream of wheat (1 minute kind)
1 egg
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil

Preheat griddle.
Spray with pan release.
Combine all ingredients in bowl and mix until smooth.
Pour batter by 1/3 cupsful onto the griddle and cook for 1 - 2 minutes per side or till brown.
Makes 8 - 10 pancakes.

1.25 c flour
2.5 tsp baking powder
2 Tbsp sugar
0.75 tsp salt
1 egg
1.25 c milk
3 Tbsp melted butter

Combine dry. Beat egg. Combine wet. Mix wet into dry. Stir until BARELY MIXED.

Sounds good to me. It's easy to find recipes for pancakes, but most of them are the heavy dense kind. Fluffy pancakes are *so* much better....

Make a mix and keep it 'till you need it.
MIX
3c flour (I use unbleached and sub. a little whole wheat)
3 teasp baking powder
1 1/2 teasp salt
2 Tbsp sugar

When you want pancakes use

1c mix
1c milk (or buttermilk)
1egg
1Tbsp oil

So easy!
I have 7 children so I must have simplicity. I've even used this in my waffle iron with a little more oil. My kids really like them. I have on occation dressed this up with 1/2c of ground flax seeds or a touch of ground cinnamon YUM!

My wife and I really like the SACO buttermilk pancake recipie. Other than the common ingredients you do have to have a container of SACO - but it keeps well in the refrigerator!
