Yes, food allergies are varied, so you could be allergic to it, or something in the salad, or the V8 juice. Go see your doctor.

You could certainly be allergic to anything that you ate. Usually food allergy presents itself right away. In addition to the itching, if you have any redness, swelling, or rashes it is probably an allergic reaction.
It could also be a coincidence. Cut everthing out that you ate during that meal for a week. Then slowly add each one back in. For example, do not eat chicken, any of the components of the salad, or the V8 juice for a week. Then the following week, eat chicken, if after two days you are OK, add back in the type of lettuce that was in your salad, and so on and so on.

While you may feel that Chicken may be the Culprit .. don't forget to look at the Entire Meal Menu.

Food Allergies are Tricky ...
they come in Two Types ..

Immedicate .. i.e. eat a Peanut and Trouble

Delayed.. i.e. Rash , GI and more...

Delayed are the Tricky-est .. in that their Allergic Reaction manifects itself as part of the Digestive process ..
so it is Hard to correlate the Food Ingestion with the Symptoms... ie. Delayed

Suggest Blood Test for the Most common Allergy FOODs ( approx 35-45 ) ... and measure TWO Antibodies ... IgE to surface Immediate & IgG4 to try to surface Delayed.

Given a Positive Score ... your Dr. will have a Custom MENU Plan put together specigic to Your Allergy Food Result.

It will tell you the Foods not to eat.. those Not to.. and those that you can ease into and watch for reactions...

Essentially, the only methodology to address Food Allergy is

#1) Test for the foods that may be causing Trouble

#2) Stop eating the offending Foods .. or back off a little til you know where you system stands.

It is important to note that FOOD Allergy Testing is not the TOTAL Puzzle .. but rather just a Piece ..
Bring yourself up to speed with Clinical & Physican Input and go from there.

As an added note, Don't forget Environmental Allergies .. they are the other side of the Allergy Coin...and very Quality of Life DisRuptive !

Here.. you can ask for an Allergy IgE Blood Test for the most common Seasonal & Year-round allergnes specific to YOUR Geo-Region ..approx. 50.. I.E. Mites, animal, dust, Tree, Weed, etc

With Environmental ImmunoTherapy, you can elect tradtional Allrgy Shots...
Or Patient Friendly ..Under-the-Tongue DROPs.

It is important to know that Allergy is a Progressive, Chronic Disease.

UnTreated, Mild to Severe Allergy continues / exacerbates...
Leading to unabated / Disease Progression .. and a Lifetime Slippery Slope of further recalcitrant Disease and Health Complications.

Allergy ImmunoTherapy is the Only Therapy that Reverses / Neutralizes the Allergy Disease process ..
All Allergy Med's only Treat Symptoms .. not Disease Source.. it just gets worse

My dad just recently cut chicken out of his diet since he noticed it made him itch all over everytime he ate it. He loves chicken and use to eat it all the time, but for some reason it makes him itch now. We haven't figured out why. Try purchasing organic chicken. Maybe the stuff they inject chickens with has an affect on you. Never hurts to try.

Yes, chicken is a fairly common food allergy. However , it could be anything you may have ingested. Don't rule anything out until you are sure.
