Very simple i know but what's the best way to get them crispy and tasty. And why do mine alway's stick to the tray? So annoying. x

First to keep them from sticking, line the tray with parchment (you can even get all natural parchment, which means you are avoiding the chemicals).
Next, I lightly brush with a high heat oil (like Olive Oil) and sprinkle liberally with spices.
*paprika and chili powder
*oregano powder, garlic powder, and Parmesan..
I would let them bake for a while, then when they are almost done turn on the broiler to help them crisp up. (Just a suggestion, you can add some Parmesan right before broil and they will be delicious)

Oven-Fried Potato Wedges Recipe courtesy Paula Deen





3 large baking potatoes
1/2 cup mayonnaise
1/2 teaspoon hot sauce
1/4 teaspoon onion salt
1/2 teaspoon House Seasoning, recipe follows
1/8 teaspoon black pepper
2 cups cornbread dressing mix

Preheat the oven to 375 degrees F.
Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the dressing mix. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Few suggestions: Add a little oil and butter when cooking, bake them on greaseproof paper. Turn them over so they don't get a chance to stick every 15 mins.

Part boil first, bring the water upto the boil with the potatoes in, boil for 3 mins, add salt, pepper oil and butter. Make sure they are coated. Then into a hot oven 180 degrees Celcius 35 mins until crispy and coloured.

Cut the potatoes into wedges. Next put them in a large bowl, add enough olive oil to coat completely, an any seasonings or herbs you want to add. Mix until completely covered and arrange in a single layer on a greased pan. (cooking spray works well for the pan) Bake at 350 until they are cooked, then turn heat up to 450 for about 10-14 or until nice and crisp. To help them from sticking to the pan, try checking them throughout the cooking time and loosen them up with a spatula every so often.

Crispy Baked Potato Wedges

5 Idaho potatoes, peeled and sliced into long wedges
Olive oil
Store-bought BBQ spice mixture
Salt

Preheat oven to 450 degrees F.
Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain. In a large bowl, toss the wedges with olive oil. Place the BBQ spice and salt in a shallow dish and roll the wedges in it. Place the wedges on a sheet pan in single layer and roast for 15 to 20 minutes until crispy.

also try soaking or rinsing wedges in bowl with running water for a while to remove some of the starch... run water until clear... this along with proper oiling with avoid sticking

Directions:

2 cloves garlic
2 tablespoons olive oil
1 cup plain yoghurt
2 tablespoons chopped parsley

Try using cooking spray before you add any other butter or oil products.

OVEN BAKED POTATO WEDGES

Vegetable cooking spray
6 tbsp. butter,melted
4 lg. potatoes, peeled
1 med. onion, mince or diced
1/2 cup potato flakes
Salt and pepper to taste


Preheat oven to 425 degrees. Spray large open roasting pan (11 1/2 x 17 1/4 inches) with cooking spray; Cut peeled potatoes lengthwise into 8 wedges,dip potatoes in melted butter. Coat with potato flakes. Add any left over butter to pan
Add potatoes to roasting pan. Sprinkle with minced onions, salt and pepper or other desired seasoning, such as lemon pepper or season salt; gently toss to coat. Bake 30 to 45 minutes or until potatoes are tender, browned, and crisp on the outside, turning occasionally.

I cook mine in a shallow baking dish lined with foil. Spray a little Pam on the foil before putting the potatoes on it. We mix golden and sweet potatoes, a large onion sliced and then sprinkle with olive oil. Mix with your hands and then season with salt, pepper, & garlic. Cook at 350 for about 30 - 45 minutes til tender. For extra crispy, turn on the broiler for a few minutes. Yummy! I get asked to make these all the time.

I bake my wedges in a single layer in a 9x13 baking pan that has a layer of canola oil covering the bottom. My favorite seasoning is to sprinkle with salt, pepper, garlic powder, cajun seasoning, onion powder, and paprika. Bake at 400' for half an hour; turn the wedges and bake another 20 minutes till done.

I bake mine, sounds like you do as well. To keep them from sticking, spray the pan with Pam or use a little olive oil. Then turn them a couple times while they are cooking.
