Over several million years, the red ones survived while the green, blue, polka dot and plaid ones didn't. The red fruit attracts animals that eat it and spread the seeds in spots where the seeds will grow. The same is true of the yellow ones unless they were developed by some sort of genetic engineering.

The tomato contains carotenoids which give it a red hue. In the wild this colouration tells animals when the fruit is ripe so that they eat it when the seed is ready and help the seeds to disperse. Humans seem to prefer red tomatoes but the other answerers are correct in saying that they come in different colours. There are many diverse varieties of tomatoes which most people never even get to see and which are preserved by charities like the HDRA in the UK. I'll try to find you a picture...

All tomato's are not red, yellow, orange, striped, even purple. The why of anything is an unknown. It's like why is the sky blue. The light spectrum and wavelengths and that's the color band we see in, If we were built different, things might be a different color. Just the way things are.
