Yeah, they can ask you how much you were paid. I think they can also ask your previous employer that question as well to verify. That way if you say you made $250,000 at your previous job, and you only made $25,000 they'd find out that you were lying.

There are many ways they can find this out.

Firstly, with a referee, you have given this person permission to speak freely about your previous job. Most people try and be helpful and honest, so when asked what your salary was, your manager is likely to say.

Also, if they wanted to find out in other ways, they could find out. For example, if you leave a job, then that job may be advertised and they can look at the job adverts from your previous company.

Usually you are trying to hide your salary if you are trying to hide other things as well (such as what your job really was, and what you did in that job). Good companies check up on your completely, and bad companies, with a high staff turnover, won't care. Because they expect you to leave soon anyway.

The easiest way they can find out is when you hand over your P45 for tax purposes - Your previous earnings so far in this financial year will be on there.

only if it is in the current tax year. you will be given a P45 and this will have to be passed to your new employer in order to make sure you pay the correct tax and have a correct tax code.

Yes, most of the time it is written into the reference when they ask how many sick days you had, attendance, how you were at your job etc. Usually it is in the reference somewhere what your salary upon leaving was.
