Gina's Pizzelles Recipe

6 eggs
1 cup sugar
3/4 cup vegetable oil
3 cups all-purpose flour
1 tablespoon baking powder
3 tablespoons fennel seeds
Optional:
1/4 cup unsweetened cocoa powder, and 1 additional egg, or
1/4 cup amaretto and an additional 1/4 cup all-purpose flour
Note: You will need a pizzelle iron to make these cookies.
In a large bowl, combine the eggs, sugar and oil and mix until well combined. Add the flour, baking powder, fennel seeds, and optional ingredients if desired, and mix well to form a homogenous batter. Set aside at room temperature for 30 minutes.
Heat the pizzelle iron until very hot. Pour 2 tablespoons of batter onto the iron, close it, and return to the heat. Cook until golden brown, about 2 minutes. Repeat until all the batter is used.

2 large egg whites
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
4 tablespoons butter, melted
1/3 cup all-purpose flour
To make the pizzelles: Preheat the pizzelle iron to medium-high heat. Whisk the sugar, egg whites, vanilla, and salt in a large bowl to blend. Whisk in 2 tablespoons of butter. Add the flour and whisk just until blended.
Brush the pizzelle cooking surfaces with some of the remaining melted butter. Spoon 1 tablespoon of batter in the center of the pizzelle iron. Close the iron and cook until deep golden, about 3 minutes. Transfer the pizzelles to a cooling rack. Cool completely. Trim off any excess pizzelle along the edges. Store the pizzelles airtight at room temperature.

Italian Pizzelle Cookies
Making pizzelles requires a pizzelle iron--found at most cookware stores.
3 large eggs
1 cup sugar
2 teaspoons vanilla
1/2 cup butter, melted and cooled
2 cups flour
2 teaspoons baking powder
Preheat pizzelle iron as directed by the manufacturer.
In an electric mixer, beat the eggs and sugar. Add the butter and vanilla. On low speed, gradually add flour and baking powder to make a sticky dough.
Drop dough from a teaspoon onto the hot iron.
Close the cover of pizzelle iron and bake for 30 to 45 seconds, or until nicely browned.
Using two forks, remove the hot wafer from the iron and place the pizzelle flat on a parchment-lined cookie sheet. Be sure to lay the hot pizzelles in a single layer on the cookie sheet. When they are completely cool, you can stack them. Dust with confectioner's sugar. Makes about 30 pizzelles.

PIZZELLES BY DAN BARBARINO (He owns a local restaurant)
6 eggs - well beaten in a large bowl
Add: 1 tsp. salt
1 1/2 cups sugar
1 cup salad oil
1 1/2 tsp. anise seeds
1 tsp. anise oil
Then Add: 5 cups flour
Batter will be very thick. Grease or spray iron each time you make a batch for the first 2 pizzelles only. Place a small ball of batter in the center of each pattern and bake for 30 seconds. (Toss first 2 pizzelles away.) Makes about 5 dozen.
