First of all it is apparently very controvercial to get into that debate. The answer depends on various considerations. In the West Ravi Shankar has been the most famous sitar artist. However he never enjoyed the same reverence amongst the learned audiences of India who favoured Ustad Villayat Khan. Critics say that his style is overly simplistic and geared towards the Western audiences, relying at times on gimmicks. Having said that the employment of gimmicks arguments does not hold any more, as every other sitar player followed suit and came up with games to please audiences rather than keep the music chaste. I personally find that lesser known sitar players are playing better music. I recently heard Anwar Khurshid at the Mosaic Arts Festival in Mississuaga Toronto. I really liked the performance. I later found that there is sitar related page that answers a bunch of different question that I visited.
