Yes you can use shortening, butter, or any other type of oil that doesn't have flavor such as canola oil. Just avoid olive oil because that just wouldn't taste good in brownies. Applesauce does work as a healthier substitute for oil in baking recipes. My mom bakes cakes with applesauce all the time and you can't taste it.

Yes. Shortening is a form of margarine which is often made from vegatable oil. Most people prefer margarine to butter because the oil makes it easier to spread. Shortening is margarine that has no colors added. Either one will work great and if all else fails use butter. Just make sure that whatever it is says 65% fat because that's whats important. Remember applesauce and other flavored oils will change the flavor, however some people enjoy this!

You can use shortening that is melted to 1/4 of a cup, but it can change the flavor slightly. Have you considered yogurt? Or applesauce? Or even sour cream? Nice substitutes!

Dont use shortening... I used melted shortening in a cake once and it was mich different than it should have been. Try melted butter/margarine.
