I would like to make my own 'designer' sausages, the idea could be good as presents to family or friends.

There's a great site called designasausage.com. You can get all of the sausage making paraphenalia you'll ever need, and some you don't! - sausage making kits, sausage making machines, sausage skins - I would say get a smoker too and make smoked sausage - great for presents - and they keep longer.

HI,I think your local meat market would help you out with that project.They may even make there own sausages for the holidays. I am sure they will help you.They have the contacts to supply you with what you need.Good Luck.

Your local butcher.

If you ask him nicely they will make them for you as well!!

Still i am not sure if 1/2lb of sausages would feature highly on my birthday present list!!

All you need are some sausage skins, which you should be able to get from a quality butcher, and a food processor. You should be able to get rhinocerous meat from the zoo and Bob's your uncle.

You could try your own recipes. You could ask your butcher where they get sausage skins from.

Well, if you come down here, they hold a livestock auction every thursday...I'm sure you could get ahold of a pig or two.
