Four hours. That includes bringing it home from the store, prepping it, a bit of cook time until it's up to 140, then minimal time after holding for when it drops below 140, and then more time until it chills back down to below 40. 4 hours all included.

Food kept between 31F and 135F is considered potentially hazardous. At these temperatures bacteria grow fairly easily so food shold not be held within this range for any ammount of time. 4 hours is the maximum time it can be held within this range and even then i dont reccomend it.
