Tanya's Boneless Short Ribs
"Boneless, simmering short ribs broiled then thrown in the oven. Easy as 1-2-3. If you like LOTS of sauce double the liquid amounts. Great for indoor cooking nights...."
INGREDIENTS
4 pounds boneless beef short ribs, trimmed and cut into 2-inch pieces
1 (8 ounce) can tomato sauce
1 cup tomato juice
1 small onion, finely chopped
3 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon hot sauce
1/4 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground black pepper
DIRECTIONS
Preheat the oven broiler.
Place ribs on a rack in a broiler pan, and broil on top oven rack 15 minutes, or until well browned. Remove from heat, and transfer to a baking dish. Reduce oven temperature to 350 degrees F (175 degrees C).
In a saucepan over medium heat, mix the tomato sauce, tomato juice, onion, vinegar, Worcestershire sauce, and hot sauce. Season with cinnamon, cloves, and pepper. Bring to a boil. Pour over the ribs in the baking dish.
Bake ribs in the 350 degrees F (175 degrees C) oven 45 minutes, or until meat pulls apart easily with a fork and reaches a minimum internal temperature of 160 degrees F (70 degrees C).

This is my favorite short rib recipe - the beer, ginger and garlic make this really gooooood.!!!!
3 pounds beef short ribs, about 10 ribs
Salt and freshly ground pepper
3 tablespoons vegetable oil
10 to 12 garlic cloves smashed
1-inch piece ginger, peeled and sliced into 1/4-inch slices
12 ounces good ale (recommended: Bass)
3 tablespoons rice wine vinegar
1 cup hoisin sauce
Season the ribs generously with salt and pepper. Heat the vegetable oil in a large heavy pot with a lid (Dutch oven) over high heat. Brown the ribs on all sides, in batches if necessary. Remove the ribs and pour off all but a couple tablespoons of the rendered fat.
Return the pot to the stove, lower the heat to medium and saute the garlic and ginger for about 3 minutes. Add the ribs back to the pot. Add the beer and the vinegar. Stir and then cover and simmer for 2 1/2 hours.
Preheat the oven to 300 degrees F.
Pour the hoisin sauce over the ribs, move the pot to the oven, and cook, uncovered, for 30 minutes.

These are great. We first got this recipe at some point during the 1960's.
ROCKY MOUNTAIN BEEF RIBS
about 3 lbs. boneless beef short ribs
Sauce:
1 cup ketchup
1 cup water
1/4 cup red wine or wine vinegar
1/4 cup diced onion
1 tsp. minced garlic
1 Tbs. brown sugar
2 Tbs. honey
2 tsp. dry ground mustard
1 tsp. chili powder
Combine sauce ingredients in a small saucepan. Bring to a boil, then simmer for 20 minutes. Cool to room temperature.
Set ribs in a single layer in a glass baking pan (like you use for lasagna). Sprinkle with meat tenderizer if desired. (I haven't done this with short ribs in years.) After sauce is cooled, pour it over the ribs. Cover and refrigerate overnight, turning occasionally.
Bake at 375 F for 1 1/2 hours turning once. Use extra sauce from the baking pan as a gravy. Great on mashed potatoes with the ribs. Any extras freeze really well. If more than 2 servings, I reheat them in the oven instead of the microwave.
