Two recipes for you - the first is Applesauce Cake that has lots of spices in it and the second is called Raw Apple Cake - my great-grandmother handed down one recipe and my grandmother handed down the second. They are wonderful.
APPLESAUCE CAKE (very moist)
1/2 c butter
1 1/2 c sugar
1 egg
2 c flour
1 1/2 c applesauce (my grandmother made her own)
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp cloves
1 tsp vanilla
1 tsp baking soda
1 c raisins
1/2 c chopped walnuts or pecans
Cream together the butter and sugar. Sift together the flour, cinnamon, nutmeg, and cloves (not the baking soda). Stew the raisins in hot water to cover them just until they plump up. Don't throw out the water. Add the eggs and vanilla to the butter/sugar mixture. Stir in the flour mixture just until moistened. Take 3 T of the hot water off the raisins and add the 1 tsp of baking soda to it, stirring until dissolved. Add that to the flour/butter mixture along with the raisins and nuts. Stir well. Pour into a sprayed pan - can be a sheetcake pan, 2 (8") square pans, or your bundt pan. Bake in a 350º oven until a toothpick comes out clean - depending on the pan, can be between 25 minutes to 40 minutes so check with the toothpick.
RAW APPLE CAKE
3 c flour
1 tsp salt
1 tsp baking powder
1 1/2 c oil
2 c sugar
3 eggs
2 tsp vanilla
3 cups (heaping) apples
1 - 1 1/2 c chopped walnuts
Sift flour, salt and baking powder. Cream sugar, oil, eggs and vanilla and combine with sifted mixture. Add apples and nuts and pour into a sprayed 10" tube pan. Place in a COLD OVEN - yes!! COLD OVEN, turn on the oven to 350º and bake for 1 1/2 hrs. This is a drier cake but very good.

Spiced Apple Cake
A simple spice cake laden with fresh apples, this dessert can be made in no time. If guava jam is not easily found in your area, feel free to substitute plum, cherry or any preserves you have on hand. It's also a terrific brunch cake which begs for a great cup of coffee.
2 cups white sugar
2 cups all purpose flour
4 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoon baking soda
2 eggs
1 cup vegetable oil
1/4 cup freshly squeezed orange juice
4 cups Granny Smith apples, peeled, cored and finely chopped (about 4 to 6 apples)
1 cup walnuts, coarsely chopped
Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip eggs until frothy, about 3 to 4 minutes then add oil and orange juice and mix thoroughly. Add dry ingredients and beat with whip at low speed until thoroughly combined.
Fold in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or until firm on top. Cover with aluminum foil if top gets too brown. Cool on rack 5 minutes, then invert onto rack and cool completely. Serve with guava cream cheese topping spread over the top.
Guava cream cheese topping:
1/4 cup guava jam
1 tablespoon freshly squeezed lime juice
5 ounces cream cheese, room temperature
Mash all ingredients in a bowl with a fork until light and fluffy.

Apple Spice Cake
Original recipe yield:
1 tube cake
INGREDIENTS
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon salt
1 cup butter, softened
2 cups white sugar
4 eggs
1 teaspoon baking soda
1 tablespoon warm water
1 teaspoon vanilla extract
3 apples - peeled, cored and chopped
1/2 cup raisins
1/4 cup confectioners' sugar for dusting
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

Apple Cake w/Hot Sauce
2 c. diced peeled apples
1 c sugar
1 egg
1 c sifted all purpose flour
1 -1/2 tsp cinnamon
1 tsp soda
1/2 c chopped nuts
bake 8" sq. pan, 350, 45 min or until done.
Mix sugar with apples, let stand until sugar dissolved. Add egg and beat well. Sift dry ingredients together and stir into apples mixture. Add nuts Pour into pan, bake, when done---imediately cover with hot sauce.
Hot Sauce:
1/2 c packed brown sugar
1/2 c granulated sugar
2 TBsp flour
1 c water
1/4 c. butter
1 tsp vanilla
cook sugars, flour and water together until clear. Add butter and vanilla; stir until butter melts. Pour sauce over cake while both are hot. Best served warm.-
