My mother learned this recipe when we lived on Guam, from a Filipino woman who was an excellent cook.
Pancit Bijon
1st step - 1 big chicken - cut into small pieces (1 1/2"). Boil it with salt until it's cooked. Strain and put the broth aside.
2nd step - 1 small cabbage or half of a big one. Cut it small. 1 cup of celery (the leaves and young stems are better). Cut it half an inch, 2 small carrots, cut quite fine, 4 stems of green onion, cut it half an inch, 1 box of chinese sweet peas or 1/4 lbs of the fresh ones, 1 small cauliflower - take it apart and slice into four pieces, if small - into 3 pieces, 4 or 5 cloves of garlic, chopped. Remember there will be no onion. Soak the bijon in the water for 5 minutes or more. Cook the garlic until golden brown, with 2 tablespoons of oil. Turn down the heat, put the cabbage, sweet peas, and cauliflower together with 1/2 cup of the chicken broth - around 3 minutes. Put all the remaining vegetables together for another 4 minutes. Take it out and strain. Put the bijon together with the vegetable broth that has been strained and always stir it so it won't stick or burn. Put less than 1/4 c of soy sauce and 1/4 c of oil and adjust little by little with the remaining chicken broth until the bijon is cooked. Put the chicken and the cooked vegetables all together and stir it good. If the bijon is kind of white yet, add a little bit of soy sauce and tease it. If it needs a little bit of salt, add some.
This recipe has been used by my mother for over 40 years now and we always love it. She serves it with Lumpia.

Personally I like Lumpia
Ground (actually finely chopped cause there's less moisture)pork and carrots (you can use other things but that's what I was told to use) wrap a finger full in a lumpia wrapper (almost as thin as filo dough) and deep fry for several minutes (6-9 minutes).
There may be different ways to make them but they are the best.

I'm not latino but their cooking is my fav!!! Get chicken wings let them sit in a bowl with water and put in a whole squeezed lime and some salt let it sit for at least 25-30mins.then rinse off clean in cool water drain then put in chopped onions cilantro some sazon the one with annato the orange color one or two packets and some adobe seasoning let it sit for awhile if you want over-night if not then spark up the stove and put like three table spoons of oil your choice let it heat up on high watch the pot and when the oil starts to move like water when you move the pan around put all of it in and stir quickly until all the chicken starts to change color and go a little brown turn down the heat to so low add water just enough to cover the chicken cover and let cook for 20-30mins. or until the meat starts separating from the bone! Then Buena!!!! Get your grub on!!! over white rice. Lemonade on Ice is good with this!!
